Banana Nut Muffins {Gluten Free}

Perfect for breakfast or snack! We have been baking again! If you have had really bad tasting gluten free muffins in the past {YUCK!}, we are here to tell you, you will not be disappointed with this recipe! You could never tell these Banana Nut muffins are gluten free! Really!  

The success to this recipe tasting so good for being GF {gluten free}, we believe is in the baking mix itself. The GF baking mix is made by  Pamela's Products. You can purchase it online at their website or check
The mix has a special blend for "flours", and you simply add egg, water, vanilla, honey, {we use Agave nectar} and nuts. We also add to our recipes, 1/4 coconut oil for added flavor, moisture and health benefits. We bake our muffins for 10min. and than turn the pan leaving it to finish baking for the time the recipe calls for. They always come out great! Make up a double batch and freeze some to have on hand for a breakfast choice for the kids!

                                    They rise up nicely.

We made the cake pedestal the muffins are on out of a thrift store dinner plate and candlestick. No spray painting required this time. We simply E6000 glued them together!
