Popsicle Wednesday :{ Honeydew, Mint &Cucumber }

"This one's for you!!! We have had so much fun this summer coming up with  interesting popsicle recipes for our Popsicle Wednesday posts! Unfortunately, this post will be our last Popsicle Wednesday post for the rest of summer. Thank you everyone who commented and even tried out some of our recipes! Today's recipe comes from  Ali and Joe of The Whole Life Nutrition Kitchen. Their blog is a great resource of natural wholesome recipes and steps for initiating the Elimination Diet. Worth checking out, seriously. It would not be right to close out our last Popscicle Wednesday post without thanking Jo of  Smile Monsters for inspiring us this summer with all of her creative, delicious popsicle recipes! Thank you Jo, this ones for you!

  Honeydew ~ Mint ~ Cucumber Popsicles
Recipe from: The Whole Life Nutrition Kitchen

1 medium to large honeydew melon, seeded
1 large cucumber, chopped
1 large handful fresh spearmint leaves

Cut the melon in half, scoop out the seeds, and then scoop out the flesh into a bowl to catch the juices. Add the melon and juices to a blender Vita Mix. Then add the chopped cucumber and fresh mint. Blend until smooth. Pour into popsicle molds. Freeze overnight.

Changes to recipe we made:
1/2 of a large Honeydew melon
1/2 large cucumber
1 handful of fresh spinach

            We love the organic look of these popsicles.
             And the fact they are 100% good for you!

Well that will do it for this summers Popsicle Wednesday!
Don't worry, for the the month of September we will bring you
 "Apple Wednesday"
where we will share with you some fun and tasty Autumn apple recipes!
Until then, remember, keep it Homespun!

For with You is the fountain of life;
in Your light we see light.
