With the change of season comes home baked Apple Muffins! Although these are high on our list of go to year round muffins, there is no denying, Autumn beckons for apples and cinnamon to fragrance the house. Not only are these flavorful, they are vegan, gluten and refined sugar free! Perfect to make this Autumn and serve warm from the oven in the morning as a take and eat breakfast. This recipe is from the well-known Babycakesnyc first cookbook which we absolutely adore!

Apple Cinnamon Muffins
Adapted from ~ Babycakesnyc
Changes we made to the recipe:
Added in 2 Tablespoons flax meal.
Replaced agave nectar with coconut nectar.
Left some skin on the apples for taste, texture and fiber.
As directions state, turn muffin pan during bake time.
Do not over mix batter.
Use fresh baking powder and baking soda.
