Sunday Supper:{GF Chicken Pot Pie}

Homespun comfort food!
When you need a little comfort food where do you turn?!
Especially when you are following a gluten free lifestyle?!
No worries, we are here with a tasty gluten free chicken pot pie recipe
that will give you all the comforts of home!

Gluten Free Chicken Pot Pie Recipe
Pie crust recipe yields two pie crusts.
Filling yields enough for two pot pies.

3 boneless, skinless chicken breasts
1 1/2 cups frozen mixed vegetables
2 medium sized red potatoes skin on, diced
1 cup sliced mushrooms
32 oz. chicken stock
1/4 cup cream or non dairy substitute
3 cloves of garlic minced
3 tablesspoons + white rice flour
Seasoning for chicken {garlic powder, onin powder, salt and peper to taste}

Preheat oven to 350. Seaaon chicken breasts.
Bake 40-45 minuets or until done.
Set aside allow to cool.

Follow directions on GF package of GF flour blend.
While dough is chilling move on to the filling.

In a sauce pot place stock, potaotes, mixed veggies, garlic, pepper
mushrooms and bring to a simmer and cook until potatoes are fork tender.
While stock in cooking, dice up cooled chicken breasts.
Mix 3 tables of white rice flour with a little water to form a thin paste.
Once potatoes are cooked, add rice paste to stock and cook on low for 1 minute.
Add diced chicken.
{we ended up adding more rice paste for a thicker filling. Adjust as you like.}
Taste for seasoning and add whatever else you may like.

Take pie dough from fridge, divide in two. Roll out 2 pie crusts for your pie plate.
Lighty oil your pie plate prior to laying down the crust.
Add your filling, and top crust and bake 40-45 minutes or until golden brown done.
{we ended up freezing some of our filling to use at a later date.}

Please note: Gluten free pie crust is wonderful, however it will never be the same
as pie crust with gluten.
So please know ahead of time if you are not familiar with GF cooking
that there will be some differences.

{ do not let the gross color of the inside of the pot pie turn you off.
We have a yellow kitchen
and the light bounces off some wierd colors in photos}

Just remember, just because you follow a gluten free lifrstyle, you can still eat those good
old, homemade, Homespun comfort foods too!
