Chocolate Pumpkin Pudding:{Vegan}

Friendly Eats. With such a wide variety of delicious foods to choose from during the Holiday, sometimes we overlook our friends and family who are following restrictive diets for various reasons. In an attempt to not leave anyone out of this wonderful time of year of eating, we bring to you a vegan chocolate pumpkin pudding that will not leave you feeling deprived! 

You will need: Vegan Chocolate Pudding Mix by Mori~Nu.{We found ours at a natural grocery store}. 1 package Tofu. Pumpkin puree. Vanilla. Pumpkin pie spice. Water. Agave Nectar. Food processor.
Dessert cups.

Chocolate Pumpkin Pudding
Follow directions on the package. We added:  4-5 Tablespoons pumpkin puree.1 teaspoon pure vanilla extract. 1-2 tablespoons agave nectar{add this after you have tasted the mousse first to see if you think it is needed}. 2 good shakes of pumpkin pie spice. Blend in food processor, add additional water if needed.

Once blended, pour or spoon into dessert cups. Cover with plastic. Set in fridge to chill.

This is a much healthier version of Chocolate Pudding with the addition of the pumpkin and tofu. If you are not big on tofu, the chocolate and the pumpkin offset the taste a lot. And the texture is smooth and silky. Give it a try and see what you think. This could also be made in to a pie by pouring the mixture into a pie crust or nut crust.

If you are having guests over this Thanksgiving who follow a vegan diet and you are looking for a nice dessert to serve, give this a try. You may even get the non-vegans saying they like this pudding too!

  3. YUM - I love pumpkin and chocolate together. I'm totally going to make this!! It's such a nice thing when people consider vegans at Thanksgiving, or any other time, really. My favorite thing is when someone makes a separate little thing of stuffing with vegetable broth instead of chicken broth. To me, THAT'S love! : )
