Recipe Wednesday:{Nourishing Brown Rice Pudding}

  Comfort Food.  Remember when grandmother would be at the stove loving preparing a great comfort food her family! Grandma may not have used the same exact ingredients we are using today, but one thing remains the same..... the homespun love put into feeding the family and bringing us together. So, take comfort in the fact that our recipe today is healthy and will comfort and warm your heart and soul.




 The ingredients you will need: Brown rice. Coconut milk. Rice milk. Agave nectar. Cinnamon. Vanilla extract.

                                                              Golden raisins

                                          And our secret ingredient: Coconut oil.


Nourishing Brown Rice Pudding

2 1/4 cups cooked brown rice.
1 3/4 coconut milk
1/4 cup, plus 2 tablespoons rice milk
4-5 tablespoons Agave nectar
1 1/4 tablespoon corn starch
3-4 tablespoons raisins
1 1/2 tablespoons vanilla extract
1 tablespoon coconut oil {straight from the jar}
Cinnamon for garnish

In a pot , place coconut milk, rice milk and Agave nectar. On medium heat begin to warm ingredients up. Whisk in corn starch. Add in the brown rice, raisins, coconut oil and vanilla and bring to a boil, than lower to a simmer for 5 minutes stirring constantly. Remove from heat and place into individual dishes. Sprinkle with cinnamon. Serve warm or chilled Approx. 4 servings


 This can be eaten pretty much any time of the day...... breakfast, lunch or after dinner! And it is Vegan, gluten free, dairy free and white sugar free! Got to love something like that right?!

  3. My Grandmother made the best rice pudding, topped with a hard sauce. I so wish she had written down the recipe.
