"Let The Good Times Roll"!

"Laissez les bons temps rouler"! Meaning, "Let the good times roll"! In honor of the Mardi Gras celebration starting this Tuesday, we baked up some gluten free vanilla muffins. Much to our delight, the muffins baked up looking like sweet little Kings Cakes minus the baby. We put our Mardi Gras muffins together in no time and with very little expense with Dollar Tree items and free Mardi Gras printables.

Using our favorite gluten free store bought baking mix, Pamela's we adjusted the recipe on the back of the package by replacing the water for low fat buttermilk, adding one heaping tablespoon of organic brown rice vanilla protein powder, extra vanilla extract, sweetened the muffins with agave nectar and, as always, added 1/2 cup melted coconut oil. 

We found the baking cups at Michael's and thought they resembled a crown and they were purple of course. When we filled the baking cups we used a large ice cream scoop and then went back and added another 1/2 scoop on top. We think that might be the reason the muffins turned out looking like mini Kings Cakes.

The Dollar Tree provided the gold sequin mask and crown bead necklaces. The necklaces came in a package of three, and the mask was single.

We found these fun and colorful Mardi Gras party printables at for free and printed them out on photo paper.

We used a 2" circle punch to cut them out with and taped them to a tooth pick.

  3. What a fun Mardi Gras idea! Those muffins do look like King Cakes. I wonder if you could stuff them with cream cheese, ice them and put some purple, gold and green sprinkles!?
