Recipe Wednesday:Tart Cherry Coconut Popsicles



All natural and healthy

Are you a cherry lover? We are talking, real cherry flavor. Not the artificial cherry you have had and possibly didn't like and now you don't like cherry flavored stuff because you have only tasted the artificial stuff.

 These are not the cherry Popsicle you find in the grocery freezer section. These are made with real, pure, good for you foods.

 Combine the true taste of cherry with the creamy goodness of coconut and you will be very pleased on a hot summer day.



If you have been with us for awhile, you know we love coming up with different, natural ingredient popsicle combinations. 

The more we can get away from the refined, processed stuff and get more into the good for you, good tasting, the better. So here we go with our Tart Cherry Coconut Popsicle.


Health Benefits of Cherries/Cherry Juice
Tart cherries are loaded with important nutrients. You would have to eat an entire sack of them to obtain all of the nutrition you can get by sipping the juice. Many antioxidants and anti-inflammatory agents are in tart cherries. Tart cherry juice is beneficial for cancer prevention, heart health, as an anti-inflammatory agent and offers protection against a host of other conditions. {source}


While shopping at the Grocery Outlet, we found this tart cherry juice and right away thought... popsicles!

And coconut milk we always have in the pantry and use it as the base more often than yogurt or dairy milk in our popsicle making. And of course the flavor is delicious!

We used one bottle of tart cherry juice and one can of coconut milk, a squeeze of Agave nectar. Mixed every together in a large glass measuring cup and poured in to our molds. 
Set in the freezer until frozen.


This is how they turned out. Instead of using the popsicle mold sticks, we replaced them with craft sticks. Next time we will use smaller sticks, these looked nice, but froze crocked and they ended up being a little bigger than we would have liked.


The natural cherry color almost looks like we added some chocolate to the mix, 
but we didn't... not this time anyway.


Maybe this summer instead of the lemonade stand we will have a popsicle stand with lots of tasty healthy popsicles to choose from!
