What says summertime to you?!
Happy you stopped by today, thank you! When you think of summertime, what comes to mind? A dip in the pool, going to the beach, family picnics. There are many things that come to mind, however, what seems to be a constant for us is: lemonade, watermelon and popsicles.
So today's recipe is in honor of those three summer traditions all wrapped up in one!
These Watermelon Lemonade Popsicle's were made without a recipe per say. We had halve of a personal watermelon left over and about 5 large lemons as well we did not want to go to waste.
So to put it in a "non recipe" recipe form, here goes.
Watermelon Lemonade Popsicle's
1/2 seedless personal watermelon or about 3-4 cups watermelon
5 lemons juiced
1 cup coconut milk
Agave nectar to taste
Popsicle molds
In a blender place watermelon, lemon juice and coconut milk. Pulse several time. Add 2-3 tablespoons of agave nectar to start with and give it a whirl in the blender. Taste. Add more agave if needed. Blend. Pour into molds. Freeze.
You get a refreshing taste of lemonade and watermelon throughout the popsicle.
The coconut milk for us was very subtle in taste. However, it packs a lot of nutrition in a popsicle.
Whip these up early in the morning and by late afternoon, when the family is ready for a cool, sweet and healthy treat.......surprise them with a Watermelon lemonade Popsicle!
