Loaded Pumpkin Gluten Free Cookie

Something good to eat.  By loaded we mean with chocolate chips, raisins, oatmeal and walnuts. These little cookies are moist, tender and yummy. We are guilty of eating one or two loaded pumpkin gluten free cookies in the morning for breakfast too!





Loaded Pumpkin Gluten Free Cookie Recipe

1  1/4 cups gluten free baking mix {we used Pamela's}
8 T. softened butter
1 egg
1 t. pure vanilla
1/2 cups gluten free oatmeal
1/2 cups raisins
1/2 cups mini chocolate chips {we used Enjoy Life brand} use more if you like.
1/2 cup pumpkin puree
2 T. pure maple syrup
1/4 cup white sugar
1/4 cup brown sugar
{we used 1 /2 cup and a little more palm sugar}
1 T. coconut oil {solid not melted}
Handful of course chopped walnuts
Dash or two of cinnamon or pumpkin pie spice

Preheat oven to 350. Line baking sheet with parchment paper. 
Whip together in stand mixed or with hand mixer 
butter, coconut oil and sugar until light and creamy.
Add egg, pumpkin, maple syrup and vanilla and combine well. 
 Scrape down sided of bowl if needed,
Add oatmeal, raisins, chocolate chips, walnuts, spice and mix.
Gradually add in gluten free baking mix and combine well.

Using a small ice cream scoop or cookie scoop, scoop out  ball onto lined cookie sheet approximately 2" apart. Bake for 10 min.
Store in air tight container if refrigerator for up to one week
Makes 24 cookies
