Coconut Cream Truffles For Christmas

Something small.  Are you spending today getting all your baking and treat making finished up? Just in case you need one more something small to add to your menu and are stumped for an idea.... we have one for you!

Healthy Coconut Cream Truffles for Christmas. This recipe is gluten free, refined sugar free, dairy free and vegan.

We found this lovely recipe over Delicious Obsessions , a clean eating blog that we recently came upon and have been combing through the recipes ever since.

Coconut Cream Truffles Recipe { Sugar, Gluten Dairy Free}


1 cup coconut cream concentrate, AKA, coconut butter {not oil here}
3/4 cup virgin coconut oil {soft, but not melted}
1/2 cup coconut milk
1/2 cup unsweetened shredded coconut
1 T. pure vanilla extract
1/8 t. salt
Our addition: 3-4 T. sugar {we used Xylitol

Shredded coconut, cocoa, carob powder, chopped nuts etc. to roll your truffles in.


In a food processor bowl, combine coconut butter and oil and blend until smooth.
With the food processor running, add the coconut milk, followed by the shredded coconut and mix until smooth.
Add the vanilla, salt and  sugar if you are adding any, and blend.

The batter will be a little soft, too soft to work with. Place the bowl in the refrigerator of 30-60 minutes to stiffen up.
Using a small ice cream/cookie scoop, scoop out a truffle and shape it a bit if needed quickly in your hands and than roll it into your chosen coating{s}.

Place truffles in pretty candy papers or mini cupcake papers.

Store in air tight container in the refrigerator or freezer.
Let come up to room temperature for the best taste experience.

Note: If you are unfamiliar with coconut oil and coconut butter, and not sure where to purchase them, a local health food store, Whole Foods store and on-line sites are good places to begin.
If you have a Trader Joe's near by, you can buy a nice sized jar  of coconut oil for about $5.00

We rolled our coconut truffles in unsweetened cocoa powder with 1-2 T. sugar and a dash or two of cinnamon, almond meal and unsweetened coconut flakes. 

               These would make a happy, and welcomed addition to any Christmas table.

Please note that although the recipe title states "cream", they are not liquid inside or gooey. Just real, clean and good for you.
