Raspberry Chocolate Truffle Pudding {Vegan}

Something of a mistake. Today's recipe post was suppose to be different. We had a great idea to try and make Vegan Truffles and ended up with a delicious tasting cross between a melted truffle and pudding. 

So instead of tossing all those wonderful ingredients, we just went with it.

Not to beat a dead horse, but something went wrong in our recipe ratio or it was the use of coconut milk instead of the traditional "cream", not sure what happened but we adjusted.

To make Raspberry Chocolate Truffle Pudding you will need the ingredients above.

These are the chocolate chips we used and the coconut milk we used.

Follow the steps outlined above and make sure not to boil your coconut milk.
Once you have all your chocolate melted and ingredients all mixed well, cover with lid or plastic wrap and store in refrigerator until set up and ready to serve. This pudding should be served immediately and preferably, in chilled dessert glasses.

Store leftovers in refrigerator.

The pudding texture is not entirely smooth, there is a little grittiness, although all the chocolate was melted, but than it has a silkiness about it too from the coconut milk and the chocolate. 

Even for chocolate lovers like us, this pudding is VERY rich. May we suggest you serve in small dessert glasses and maybe even share one with that special someone.

Well if nothing else, at least this is a pretty healthy pudding/truffle/recipe mess up for the Christmas season. We hope we have inspired you to get in the kitchen and see what new recipes you an come up with. Even the mistakes have a way of becoming something beautiful!
