Raspberry Cheesecake In A Jar - Low Fat. Refine Sugar Free.


Did you happen to catch our guest post at The Frugal Girls yesterday!!! Well here it is!!!!!

 Just because it is Valentine's Day doesn't mean you have to forego a special Valentine's Day dessert because you are trying to eat healthy!

We have a low-fat, no refine sugar, nut crust and yummie... Raspberry Cheesecake recipe for you to try today. 


So you can still keep up with your healthy eating lifestyle and have a special Valentine's Day treat too!!!








               Raspberry Cheesecake Recipe

        

                                                          {make the crust first so it can set up}

             Pecan Cheesecake Crust Recipe


1 cup finely ground pecans.


4 tablespoons butter or Earth Balance melted.


1-2 tablespoons sugar/sweetener {we used Xylitol}



Directions for crust:

Place ground pecans in a bowl. Add melted butter and sugar, combine well.

Place mixture in bottom of serving vessel
and pat down.

Refrigerate while working on cheesecake filling.


{Depending on what type of serving vessel you are using, you may need to adjust the amount of crust ingredients up or down.}



Cheesecake Filling:



2 packages reduced fat or 1/3 less fat cream cheese, softened.

2 cups fat free plain Greek yogurt.


1 tablespoon pure vanilla extract.


6 tablespoons powdered sugar. {we used Xylitol we powdered in the food processor. Tutorial here.}




Directions:

Place all ingredients in to a mixing bowl and blend until smooth. Scrape down sides and blend a couple more seconds.


Remove crust from refrigerator and add cheesecake filling. Return to refrigerator for 3 or more hours to firm up.





Raspberry Cheesecake Sauce Recipe

Super simple to make.

1-2 cartons of fresh raspberries, clean and dry.

Sweetener to taste. {we used Agave nectar}

Place berries in food processor start with a little of your sweetener of choice and puree. Taste and adjust sweetness.



 When ready to serve, remove cheesecake from refrigerator and pour the raspberry sauce on to top of the cheesecake. YUM!




We love serving the cheesecake in individual servings in tiny mason jars.






The cheesecake filling is a little tart and sweet, creamy and not dry. The pecan crust adds a delicious depth, different that a graham cracker or other type crust.
