Vanilla Bean Muffins With Strawberry Cream Cheese Spread - Gluten Free & Low Fat


 Valentine's Day doesn't have to be all about chocolate
Of course we love chocolate as much as the next person, and it will make its way into another post, on another day, so for today, we are talking muffins.

Not any old dried up, tasteless muffins but ....

moist, tender flavorful vanilla bean muffins, which by the way are gluten free... and... we made a low fat strawberry cream cheese spread to lavish the muffins with too! Hungry?!



Well alright than, lets get started with the vanilla bean muffin recipe shall we.





Vanilla Bean Gluten Free Muffins Recipe

1 1/4 cups gluten free baking mix. 
We use  Pamela's.
1 egg at room temperature
1/4 cup milk {we used rice milk}
1/4 cup or more Agave nectar {sub what you like}
2 tablespoons coconut oil melted 
1/2 a vanilla bean insides scraped out
1 teaspoon pure vanilla extra {optional, only if you want to kick up the vanilla in the muffin even more}

Preheat oven to 350. Line your muffin tin. Place gluten free baking mix in to a medium size bowl and add all the other ingredients.
Mix well but do not over beat. Using a wooden spoon as opposed to a stand mixer is fine.

Using a large cookie dough scoop or ice cream scoop, scoop one scoop into each cupcake paper.

Place tin the center of the oven and bake 15 minutes. Ovens vary, but start checking at 15 minutes and go longer if needed.

Do not over bake or you will end up with a very dry muffin like the ones mentioned earlier. Yuck!

Allow to sit for five minutes and remove from tin.

Serve as is or..... make up a bowl of strawberry cream cheese spread to put on or in the muffins.






Strawberry Cream Cheese Spread Recipe


1 package Philly cream cheese, 1/3 less fat, or fat free softened. {You can make this vegan by using vegan cream cheese}

1/2 cup Simply Fruit Jam {it is made without added sugar}.

You may want to start out with less and see how that works for you.

Place softened cream cheese in a bowl and add the strawberry jam. Mix well to blend. 


Store covered in refrigerator for up to one week.




Spread your strawberry cream cheese on top or slice open your muffin and put a big dollop inside your muffin. Yummy!

Either way, just get some on it and enjoy!
