Carrot Coconut Quick Bread - Vegan Gluten Free

Baked a few mini loaves of bread!

Seems like carrot cake is as popular at Easter as gingerbread is at Christmas! We didn't make a carrot cake, but we did make carrot coconut quick bread and added golden raisins and walnuts to the mix!

               This is a very healthy recipe.

To flavor or quick bread base we added:

 1 1/2 cups finely shredded carrots
1 cup golden raisins
1 cup unsweetened shredded coconut
1 cup chopped walnuts
The recipe calls for butter {Earth Balance} or oil. We used coconut oil.

                Tender, moist, and flavorful.

This quick bread really is that good! Holds up well with coconut butter spread on it. We made up mini loaves and love that they are just enough for one person. Whether you eat at one time of come back to the rest later.
