Do you love the chocolate and peanut butter Easter eggs this time of year? Well, we love them year round truth be told!
Although these are not those oh so famous eggs, they are chocolate and they are peanut butter and they are good!
And depending on the ingredients you choose to make these with, the more healthier they will be.
Mini Peanut Butter Cup Recipe
1 Wilton Peanut Butter Cup Mold
1 bag of chocolate chips. {we used these.}
1/2 cup all natural peanut butter
1 tablespoon powdered sugar {we make our own using this}
Clean and dry candy mold. Place peanut butter and powdered sugar in a small bowl and combine. If mixture becomes too thick, add a little melted coconut oil or another type of oil to thin it out just slightly.
In a microwave safe bowl melt chocolate chips, or use a double boiler on stove top.
Once chocolate is melted, coat the inside of the mold with a coat of chocolate. We use a kitchen use only paint brush to do this task. Place in freezer to set up.
Once chocolate is set up, place a pea size or a little larger bit of peanut butter in the mold, spoon in melted chocolate to cover peanut butter. Set in refrigerator or freezer to set.
Turn mold upside down and gently press to release candy. Let come to room temp and serve.
Yields 24
They don't all come out perfectly shaped, but we don't care.
The peanut butter is just bursting to come out!

Normally we are more limited to the number of peanut butter cups we allow our family to eat, but since these are a more healthier version, because of the ingredients we chose, we have loosed up the reins a little bit.
