Today we are celebrating with some oatmeal celebration cookies. What are we celebrating?! God. Spring. Life. Love. Family. Friends. Anything and everything good.
Adaptaded from Elizabeth Barbone's book Easy Gluten Free Baking
1 cup gluten free oats
1 cup white rice flour
1/4 cup sweet rice flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) butter, softened
3/4 cup packed dark brown sugar (we used Palm Sugar)
1/4 cup granulated sugar (we used Xylitol)
2 large eggs
1 teaspoon pure vanilla extract
Our Add Ins:
All natural chocolate covered pieces. Raisins. Unsweetened shredded coconut.
Preheat oven to 350 F. Line 2 baking sheets with parchment paper.
In a medium bowl, whisk together dry ingredients.
In a large bowl, cream together butter, brown sugar and granulated sugar. ( Use high speed hand or stand mixer.) Add eggs, i at a time, mixing well between each addition. Add vanilla. Reduce mixer speed and add dry ingredients. Blend until a dough forms. Add any additions at this time. Cover dough and chill, 10 minutes.
Drop dough by tablespoonfuls onto prepared cookie sheets, about 2 inches apart.
Bake one sheet of cookies 10 to 12 minutes or until light golden brown and aromatic.
Remove cookie sheet from the oven and place on wire racks to cool, 3 to 5 minutes. Transfer cookies directly onto wire racks to cool completely. While first sheet is cooling, bake second sheet of cookies.
Makes about 4 dozen.
Celebrate by slipping a couple of these into a school lunch or as an after school treat with some ice cold milk!
