In the mood for something sweet, orange and fairly healthy?
We have a tasty and simple little treat for you today...an orange vanilla creamsicle cheese cake treat to be exact!
Low fat, gluten free and refined sugar free too!
This is a no bake cheese cake. With a pecan crust.
2 packages 1/3 less fat cream cheese, room temperature softened
1 cup plain, fat free Greek yogurt
1 orange, zested and juiced
1 tablespoon pure vanilla extract or 1/2 vanilla bean scraped out
1 teaspoon pure orange extract
1/2 cup more or less agave nectar or other sweetener of choice
5 tablespoons melted coconut oil
2 cups whole pecans
Make your crust first. Place pecans in a food processor and grind fine. Place pecans in a bowl and add the coconut oil. Blend well. Depending on what you are serving the cheese cake in, place the pecan mixture in the pan, jars or cups pressing down firmly. Place in the refrigerator to set up.
Place cream cheese in mixing bow and whip until smooth and creamy. Scrape down sides of bowl. Add orange zest and orange juice and blend well. Scrape sides down. Add yogurt and agave, vanilla and orange extracts and blend well.
Scoop mixture in to serving vessel(s), cover and refrigerate 2 hours. Serve with an orange garnish.
Recipe yielded 6 dessert glasses.
Fell free to switch out the pecan crust for something different. We love the nutty flavor combined with the bright orange flavor.
