Chocolate Cheesecake In A Jar

We are helping you today feed your chocolate craving with a low-fat chocolate cheesecake. This would be a nice addition to your Mother's Day dessert table sweets! It doesn't take a lot of time to make and little jars filled with sweet treats makes every one happy!

Although we are calling this "cheesecake", for some reason this go round with our same cheese cake recipe turned out more like a mousse in texture. The flavor is fine. Possibly it was the raw cocoa powder. So just so you know, if you try this recipe, go easy at first on the cocoa powder, try it out for taste depth and texture and add more if needed.

Chocolate Cheesecake In A Jar Recipe

2 packages 1/3 less fat cream cheese
1 cup Greek plain, non fat yogurt
1/2 cup powdered sugar (more if needed to adjust for taste.
We used powdered Xylitol)
3/4 cup raw, organic coca powder or cocoa powder
2 tablespoons pure vanilla extract
1-2 sleeves graham crackers or cookies (we used gluten free chocolate chip cookies about 8-10)
3 tablespoons, possibly a little more melted butter or coconut oil
Mason jars

Make up your crust first by placing cookies in a food processor and pulse until they are sand like. Add melted butter and pulse until combined. Transfer cookie crumbs into mason jars and tamp down making a crust layer. Place in refrigerator to set up.

Place softened cream cheese and sugar in mixing bowl and blend with hand mixer. Add yogurt, mix. Add vanilla and cocoa powder { a little at first to check for taste and texture, add more if needed} and blend well.

Scoop mixture into mason jars,  sprinkle tops with mini chocolate chips if desired, cover and chill for 30 minutes or so. prior to serving allow to stand at room temperature about 10 minutes.

Just thinking, a little whipped cream on top would be nice. Or how about a drizzle of chocolate fudge sauce? Or maybe caramel? Enjoy!
