Maple Sweet Potato Muffins / Gluten Free

Coffee or tea and a muffin anyone?! We love starting out the morning with a warm healthy breakfast muffin. These Maple Sweet Potato Muffins are just delicious and super simple to make when you use a pre made gluten free bake mix.




                                        Maple Sweet Potato Muffins


1 3/4 cups gluten free bake mix {we use Pamela's}
1 egg
1/2 pure maple syrup
1/4 cup agave nectar
1 tablespoon pure vanilla extract
1 medium baked and mashed sweet potato-yam
1/4 cup liquid, milk or water
1 teaspoon cinnamon
2 tablespoons cocnut oil melted
Cupcake liners

Place all dry ingredients into a bowl and mix. In a separate bowl place the wet ingredients and blend well. Move the wet ingredients into the dry and blend together well.

Pre heat oven at 350. Using a ice cream scoop, place one large scoop into each cupcake liner. Bake for 15 min and check to see if muffins done. If not, bake for 5 more minutes.

Remove from oven allow to cool. Store in container.



Adding the sweet potato to the muffin is a great way to add additional nutrition and flavor to a muffin recipe.
