Goji Berry Bark with Coconut, Almonds & Maca

Goji berries, coconut, almonds and maca oh my!

Are you trying to eat healthy during Christmas? 
Possibly your New Years goal is to start eating better and clean up your diet. 
Either way... good for you, really!

Our recipe today of Goji Berry Bark is going to make it that much easier for you to continue or start, and not feel like you are missing out on any indulgent treats.

Goji Berries:

Unique among fruits because they contain all essential amino acids, Goji Berries also have the highest concentration of protein of any fruit. They are also loaded with vitamin C, contain more carotenoids than any other food, have twenty-one trace minerals, and are high in fiber. Boasting 15 times the amount of iron found in spinach, as well as calcium, zinc, selenium and many other important trace minerals, there is no doubt that the humble Goji Berry is a nutritional powerhouse.
This amazing little superfruit also contains natural anti-inflammatory, anti-bacterial and anti-fungal compounds.                                                                                                                  Maca Root

Maca root, also known in science land as Lepidium meyenii or Lepidium Peruvianum, has been prized for generations as an energy enhancer and mood stabilizer. It’s a nutritionally and powerfully complex with life-giving (and beauty-enchancing) ingredients like phytonutrients, amino acids, vitamins and fatty acids. Plus, there’s an abundance of trace minerals and phytohormones.

 Maca root has the capability to regulate, support, and balance the hormonal systems of both men and women. Hello promising anti-acne herb! And since it’s boosting the hormones, it may also help with fertility, digestion, energy levels, and all things sexual. Peruvian Maca root is an adaptogen (I love that word), sharing many similarities with ginseng. Goji Berry bark with Coconut, Almonds & Maca Recipe

1 cup organic cocao butter
1/2 cup organic raw cocoa powder
1/4 cup organic coconut oil
1/4 cup organic Agave
1 teaspoon organic vanilla extract
1 cup organic Goji berries  {rough chopped using food processor}
1 cup organic unsweetened coconut
1 cup organic almonds rough chopped 
2 tablespoons Maca {we use Maca Bliss}

Melt cacao butter in a double boiler. 

While it is melting line a tray with wax paper.

When melted add your berries, coconut, almonds and mix and pour onto tray.

If desired, add additional berries. Set in refrigerator to set.
When set remove from pan and break or chop up.

Keep in container in refrigerator. 

Since this bark is not the "traditional" hard bark, it may not travel well unless you have a way to keep it cool. It tastes good either straight from the refrigerator or just about at room temp.

We like the idea of knowing we have these treats tucked inside the refrigerator during Christmas so when everyone else is indulging in Christmas treats, we can too... healthier and no guilt!
