Peppermint Coconut Dream Cups

Back with another Peppermint recipe to share! 
We are just in that kind of mood!!!
So there are peanut butter cups, almond butter cups and now... Peppermint Coconut Dream Cups!

One can NEVER have too much peppermint at Christmas time.

We came across the recipe while visiting 
Living Healthy With Chocolate and without hesitation, right on the list of Christmas treats to make it went! 
With our added ingredient touch.

Peppermint Coconut Dream Cups Recipe

  • ¼ cup coconut butter
  • 3½ tablespoons 100% dark chocolate
  • 1 tablespoon raw cacao powder
  • 2½ tablespoons coconut milk
  • ¼ teaspoon vanilla extract
  • 2½ tablespoons raw honey
  • pinch salt
  1. add two teaspoons of coconut butter into six paper cup molds or silicone molds each and refrigerate. If your coconut butter is not soft, melt it by putting the jar in a saucepan, cover with water and heat it slowly until it melts completely.
  2. melt the chocolate in a double boiler over simmering water and stir in the cacao powder, coconut milk, vanilla, honey and salt
  3. add one teaspoon of the chocolate to the center of the chilled coconut butter and refrigerate until chocolate is set
  4. remove from fridge and add one more teaspoon of the chocolate to the center and refrigerate until set 
  5. top it with two teaspoons of coconut butter and refrigerate until set
  6. garnish with coconut flakes and serve
Our additions: Added pure peppermint extract to the chocolate mixture once it was melted. 
Made our own coconut butter which was so easy. Dump a bag of organic unsweetened, shredded coconut into a blender/food processor and blend until you have a very smooth consistency. Store in a jar in the cupboard. Here is a great tutorial if you need a visual.

NOTES for the next batch:

While we love coconut butter, in this recipe the sweetness comes from the inside o the cup, and we would prefer there be some sweetness on the outside as well. 
Next batch, sweeten the coconut butter with a liquid sweetener.
