We recently made up a batch of Paleo Pumpkin Spice Fudge, via The Spunky Coconuts cookbook, The Paleo Chocolate lovers Cookbook.

Paleo Pumpkin Spice Fudge Recipe
1 1/2 cups water
3/4 cup coconut sugar
2 cups melted coconut butter/ cream concentrate
3/4 cup raw cacao powder
2 teaspoons pure vanilla extract
1/2 teaspoon liquid vanilla stevia
Our addition: 1 teaspoon pumpkin pie spice
In a small sauce pot, heat the water over medium heat. Add the coconut sugar, stir until the sugar has just dissolved, turn off the heat.
In a food processor with an S blade, puree the sugar water, coconut butter, raw cacao powder, vanilla extract, pumpkin pie spice and liquid stevia for 20 seconds, stopping once to scrape down the sides.
Line a 8 x 8 dish with a piece of parchment paper large enough to cover the bottom of the pan and go up the sides.
Pinch the corners of the paper to help it stay in place.
Using a flexible silicone spatula, transfer the fudge mixture to the lined pan, and spread out evenly.
Refrigerate the fudge until set, and store in in the refrigerator.
Cut the fudge into bite sized pieces to serve.
We like to allow the fudge to come room temp before eating.
About 12 servings.
