Did we mention healthy?! Oh yes this recipe for Raspberry Italian Cream Soda falls under the categories of: Healthy; Paleo, Dairy Free, Gluten free, Clean Eating and Yummy! We LOVE all those categories too! The natural color of the raspberry is Valentine beautiful and like nothing from the food coloring box. What a pretty drink. So to your good health friends!
Healthy Raspberry Italian Cream Soda
1 cup fresh or frozen (thawed) organic raspberries unsweetened
1 large bottle San Pellegrino Italian water
1/2 -1 cup canned organic coconut cream milk at room temperature
Organic liquid vanilla Stevia
Cute bottles or glasses
Cute paper straws
Place fresh or thawed (with any liquid) in to blender. Add 1 table spoon water and add Stevia to your liking to sweeten the raspberries.
Puree until a nice "sauce" or "syrup" forms. Taste and adjust sweetness by adding a couple more Stevia drops and blend again. If you prefer a thinner "syrup" add additional water a little at a time until desired result achieved.
In your bottles or glasses begin by placing 1-2 table spoons of the raspberry "syrup" followed by Italian soda water almost to the top, but not quite, as you want to leave some room to add in your cream.
Add a splash, (big or small), of coconut cream into the bottle/glass.
Add a straw, stir and enjoy!
(If you have a BIG sweet tooth, you can always add more Stevia at this point. Also fee free to add more "syrup" if you like).
Make sharing something special by making up some cute Valentine bottles to serve this dreamy drink in. Simply use cardboard hearts stamped with a sweet message and tied to the neck of the bottle and add a little felt red heart as well.
Bottle on the left is unstirred after adding coconut cream and the bottle on the right is stirred. Either way....very pretty!
