We made a healthy treat for St. Patricks Day that is Paleo, gluten free, dairy free and could also be vegan if you use coconut sugar or maple syrup in place of the honey we chose to use.
We call these Sunbutter Cups of Gold. We wanted to change up the usual, peanut butter cup version, and used yummy, healthy sunflower butter in place of peanut butter.

SUNBUTTER CUPS OF GOLD RECIPE
2 1/2 cups chocolate chips, melted (we used these)
1/2 cup organic sunflower seed butter (we used this one)
*Recipe calls for 1/4 cup powdered coconut palm sugar or maple sugar
We used 1/4 cup of raw local honey instead.
1 1/2 t. pure real vanilla extract
Pinch of salt
1 t. coconut oil melted if needed (to thin out melted chocolate)
Line a mini muffin pan with mini foil cupcake papers. Spoon melted chocolate into lined cups, filling each about one-quarter full. Place in the freezer/refrigerator to set up, about 5-10 minutes.
In a bowl combine sunflower seed butter, honey or sugar, vanilla and salt and stir until well blended.
Take a heaping teaspoonful of the sunbutter mixture and roll it into a ball. Flatten slightly and place on top of the set chocolate in the cupcake paper.
Repeat with remaining sunbutter mixture.
Spoon remaining melted chocolate over the top of the sunbutter in the cups, being sure to cover it completely. You may need to add a teaspoon of melted coconut oil to the chocolate to thin it out a bit.
Tap pan on the coutertop to even out and smooth the chocolate. Place back in freezer/refrigerator until set.
Store sunflower cups in a container at room temperature.
We thought these sunflower seed cups were a lot more filling than regular old peanut butter cups and did not need to eat as many to be satisfied. Something about consuming healthy foods that our bodies love.
