Tuscan Olive Tapenade

 A Taste of Italy!You don't have to go to Italy to enjoy a good Tuscan OliveTapenade!
Having Italian roots is one of my favorite boasts in life, after the Lord Jesus! Love the traditions, culture and of course the food! Authentic Italian food is actually a very healthy lifestyle. It falls into the Mediterranean Diet you probably have heard  so much about being so healthy for you. Unfortunately, and sadly, people think of "Italian" food as cheesy pizza and overly sauced spaghetti! Well, today I would like to introduce you to a yummy, healthy and quick olive tapenade that will leave you wanting more! Interested?!........

First things first! Set the mood! Put on some good Italian music.
If you are so inclined, pour yourself a glass of vino!
Now you are ready!
What you will need:
Good olive oil, 1/2 cup. 2 cans of black olives. Stuffed green olives with pimentos, 1/2 cup.
Capers, 1 teaspoon. Garlic, 3 cloves {need to keep the vampires away!}. Salt and pepper to taste.
NOTE: Please taste prior to adding salt, as the capers and green olives we find, gives the recipe enough salt.
Open and drain black olives. Place both cans in to a food processor. Add all other ingredients into the food processor EXCEPT: olive oil and salt. Pulse ingredients a couple of times to break up the ingredients. Scrape down bowl and give another 1,2, pulse.
Add olive oil and pulse a couple times, scrape down bowl, pulse again, taste for seasoning. pulse a couple more times if needed.
Remove from food processor bowl and transfer in to rustic serving dish. Serve with crackers, rustic Italian bread, crackers or whatever you like! Enjoy!

This is always a favorite and the first to go when present at a party or family gathering. I am sure you will find the same to be true also.
