Winter Hot Cocoa Mix {Vegan}

Something warm.  During the cold Winter months, to warm ourselves up, more times than not, we turn to hot cocoa.

While not too many, if any instant hot cocoa mixes in the stores are as healthy for you as you would like, we wanted to try our hand on making our own "instant" hot cocoa mix and make it vegan as well.

Make up a batch of this cocoa mix and keep it on hand to make when you need to take the chill off.

    Winter Hot Cocoa Mix {Vegan Style}

2 cups good quality unsweetened cocoa
1 cup sugar {we used Xylitol}
3-4 heaping tablespoons Organic Soy Milk Powder
1/2 cup {or more} Vegan mini chocolate chips {we used Enjoy Life brand}

Place all ingredients into a clean, dry bowl.
Using a whisk or large spoon, blend ingredients together.

Once all ingredients are well combined, place in a jar until ready to use.

When ready to use, fill a mug with warm to hot dairy free milk almost to the top. We use Rice milk but you can use whatever you like.

Add 3-4 heaping tablespoons of the hot cocoa mix to the hot milk and stir well. Adjust strength as needed.
Top with your favorite topping{s}.

Changes you can make:

In place of the Xylitol we used, you can substitute regular cane juice sugar or granulated sugar in the recipe.

Use a liquid sweetener {Agave, Stevia, Brown Rice Syrup etc.} once the cocoa is mixed with the milk.

You can omit the Organic Soy Milk Powder all together if desired. We like the little bit of creaminess it lends.

A nice sprinkle of cinnamon in your cocoa is really nice too.

               Should last up to 3-4 weeks if kept sealed and dry.

How do you prefer your hot cocoa topped? With marshmallows whipped cream of both? If you prefer whipped cream, here is a vegan whipped cream recipe for you to try.

And if you prefer marshmallows, here is a vegan marshmallow recipe for you to try as well.

Do we ever really need an excuse for making a mug of hot chocolate?

He who finds a wife finds a good thing,
And obtains favor from the Lord.
