P B & J Chocolate Cups - Healthified!

It is so easy to love peanut butter cups, and just about everyone does. And the same can be said of peanut butter and jelly sandwiches we suppose... so why not a p b & j homemade chocolate cup?!

Well of course that is what we did. Only in a healthified kind of way. Just the way we like things!

Peanut Butter & Jelly Chocolate Cups Recipe

1/2 cup coconut oil
1/4 cup cocoa powder (raw cocoa powder is best)
2 tablespoons agave (or sweetener of choice adjust according to taste
1/2 cup natural peanut butter
3-4 tablespoons natural jam
silicon cupcake/candy cups

Melt the coconut oil, cocoa powder and agave on the stove on medium heat until all blended well. Allow to sit 10 minutes to cool and thicken. (You may need to place in refrigerator for 5-10 minutes to help speed this process along.)
While chocolate mixture is cooling mix together the peanut butter and jelly and set aside.

Once chocolate has cooled and thickened, brush the chocolate inside the silicon cups getting the bottom and sides covered well. Place in freezer to set up.

Take cups from freezer and apply another chocolate coat if needed. Using a teaspoon, place a dollop of the peanut butter and jelly mixture into the chocolate cups.

With the remaining chocolate mixture, cover the peanut butter and jelly and place in freezer.

Peel back the silicon mold from the chocolate to release your treat. let stand at room temp about 5 minutes before serving.

Store in refrigerator. Makes about 12 mini chocolate cup treats.

A look at the inside of the p b & j cups. We used chunky peanut butter in our recipe.

And we used a unsweetened blackberry jam. The natural sugar from the berry was plenty sweet enough.

The chocolate gets almost a fudge-like consistency from the coconut oil, which is very nice.

Must confess, these were very good at breakfast time!!!
