Recipe/ Snickerdoodles {Paleo, Vegan, Gluten Free}

We have been having a lot of fun baking lately and experimenting with some cookie recipes like this Snickerdoodles recipe from Urban Poser

It is Paleo , {if this is a new term for you you can learn more here,} vegan and gluten free. And guess what? 
They still taste great!

                          Snickerdoodle Recipe { Paleo, Vegan, Gluten Free}
Adapted from Urban Poser

2 cups almond flour {we used Bob's Red Mill}
1/4 teaspoon salt
1/4 teaspoon baking soda
4 tablespoons coconut oil softened, not melted into oil
1/4 cup raw organic honey or agave nectar
1 tablespoon gluten free pure vanilla extract
6-8 tablespoons organic coconut sugar
2 tablespoons ground cinnamon

Preheat oven to 350. Line a cookie tray with parchment paper. In one medium size bowl add all the dry ingredients except for the cinnamon and coconut sugar and mix well. In another bowl, combine all the wet ingredients. Add the dry ingredients to the wet and combine well.

Mix together the coconut sugar and cinnamon in a bowl.

Using a medium size cookie scoop, scoop out even amounts of cookie dough, and roll each ball into the coconut sugar cinnamon mixture prior to placing them on the cookie sheet. Space them out about 3 inches apart, and using your fingers or a drinking glass, slightly flatten the cookie on the baking sheet.Bake 8-9 minutes and check. If needed, bake
another couple minutes.

Allow to cool on the pan.

These are flavorful, tender and chewy. Not too sweet with a touch of cinnamon. Store these in an air tight container to keep them fresh.

It really is comforting to know that the ingredients here are quality and healthy. So when the kids, or you, want a couple more cookies it is a lot easier to say "yes"!

    1. Thank you Becca for pointing that out. In the recipe we wrote "1/4 teaspoon cream of tartar" when it should have been "1/4 teaspoon baking soda". We corrected our mistake on the recipe post. Thank you!
