Healthy Living/ Berries & Cream Popsicles

We are taking advantage of the last few Summer vacation days we have left before back to school on Wednesday. 

We are also enjoying a few more Summer Popsicle recipes, like these Berries & Cream Popsicle's during these hot August days here in California. 

                  Berries and Cream Popsicle Recipe


1 1/2 cups fresh or frozen organic blueberries

1 1/2 cups fresh or frozen organic red raspberries

1 cup organic, unsweetened cherry juice

1 cup organic coconut cream/milk in the can

2 tablespoons Xylitol {or sweetener of choice}


In a medium size bowl place all the berries and sweetener and mix.

 Remove some berries and place them inside of your Popsicle mold. 

Place the remaining berries in a blender along with the coconut cream/milk and cherry juice.

Blend for about 25-30 seconds, more if you want the mixture very smooth. Taste and adjust sweetness if needed.

Pour mixture into molds, cover add Popsicle sticks and freeze.

We just love the natural colors of the berries. The specks and flecks or the real fruit make for a organic, healthy looking Popsicle.

While Summer may be ending, we are looking forward to the warm days we grew up calling "Indian Summer" we get here in California during September and October.

We are sure to have a just a few more Popsicle recipes for those days too!
